as all the birds take flight/off

It's beautiful to watch the flutter of wings as all the birds take flight.

Hi,
Is it the same to say "take off" instead of "take flight" in the above? Thanks.

It just occurred to me that "take flight" may mean "are flying," so it's different from "take off." Am I to the point?
