As adjective as

Older workers can be as adaptable and quick to learn as anyone else.

This sentence is from Oxford Advance Learner Dictionary. I wanted to know whether I can change this sentence as follow.

Older workers can be as adaptable and quick as anyone else to learn.

Can I use "to infinitive" after "as adjective as"?

For me, the parallelism in the second sentence does not feel exactly right. It seems to be saying:

Older workers can be as adaptable as anyone else to learn.
... and ...
Older workers can be as quick as anyone else to learn.

You can't really be "adaptable to learn".

In contrast, the original means:

Older workers can be as adaptable as anyone els
