articles!! Please HELP!

Hello. I was taking an articles test online and was baffled by couple of questions.

Q. It was ____ excellent meal last night.
Q2. We usually have ___ dinner at eight.

I know that the answer for each question is "an" and "no article" respectively. But for the first question, why does it sound weird to say "the excellent meal last night"? Couldn't it be the case where the sentence is referring to the specific meal that was served "last night" and therefore be "the meal" instead of "a meal?"

Also, is there any instance where dinner is countable?
