Dear teachers,

a) Why do we use "that" and not "this" in the following example?
b) Would you use an article here or not? If not, would you please tell me why?

Client: Do you have this dress in blue, size 8?
Seller: We have it in blue, but not in that size -and there is / will be (both possible?) two weeks’ delay before we get X / the new stock.

If I were the customer, I may say "Do you have this dress" (hold out the dress) but in this size?" (and hold out another item in the size I want). I use this, from my perspective, because I'm holding it. From the salesperson's perspective, there is no "this," unless he holds us another dress and says "We have this dress in blue in that size, however." In other words

a) Why do we use "that" and not "this" in the following example? 'This' could be said. In your example, the speaker is probably thinking 'If it's in my hand, it's this, but it's in your hand so it's that.' It's a matter of how the proximity is perceived.
