Are there rules for 'And' and 'But'

First of all hi. This is my first post.

I have a question about the use of 'And and 'But' which i'm a little curious about.

I was taught never to use the above after a fullstop (period), yet it now seems to be used everywhere. What is the correct grammar as i was under the impression it was best to use an alternative such as 'therefore'.

Their use at the beginning of a sentence is part of style rather than structure per se-- it is a way of causing a moment of silence and a subsequent emphasis on the clause following the conjunction that would not exist if the sentences were simply compounded.
