I know commas are placed before and after a name if it comes after a profession. For example, "A published poet, Bella Li, will be in attendance." But what about if it comes after a description of the person that's not necessarily a profession. For example, "Mr. Williams started the site with co-founder and former colleague, John Miller, in 2010." Are the commas before and after John Miller correct?
They are correct. You could also omit both of them, as in My friend Alec lost his wallet.

- Last week I met with my friend, Fred Carpenter, famous for his stories about hillwalking.

No. Regardless of whether the name is after a profession or after another descriptive term, names (proper nouns) in apposition are not enclosed within commas.
