Are both of the sentences correct?

She has such a high opinion of her teacher.

She has such high an opinion of her tacher.

I'd say, "She has such a high opinion of her teacher."

"such" and "a" (or "an") have to be kept together in these expressions.
The "a" is dropped for plurals and non-countables, of course.

such a good boy
such an active child
such good boys
such active children
such sweet cake
such awful news
such an awful thing to say
