The one that seems least possible to me is the colon.

I agree with Mister Micawber. The one with the colon is definitely incorrect. All the others others are okay from the standpoint of grammar, although they suffer somewhat stylistically. Context is important when making style-related decisions.

Interesting question. Strictly speaking, yes, but I suspect that 'that's all' may be considered a fixed phrase, a commentary interjection.
