Apostrophe or not

Hi,

I am not sure I can phrase my question clearly but my question is do we need to put apostrophes when we sometimes do not write out the full names of entities but make them short like this:

Jim's Laundry -- Jims or Jim's???

Toto Market -- Totos or Toto's???

Which one is right? Do you have a thread that explains this in detail?
