Hi

The road runs down to the Dragon's Head. CAN I WRITE Dragon Head without an apostrophe and an "s"?

If it's a standard name of a street, square, building etc., I guess it should be written the way it is usually written on relative signs. If an apostrophe is present there, then you had better not omit it.

You can't change proper names on a whim.

It's a bit like someone saying 'oh I don't like the name Newguest, I'm going to write 'Nowguest' instead. You can't just change someone/something's name because you feel like it.
