Do you use an apostrophe when you refer to couples by their last name like The Smiths, The Gregorys, etc?

No. No apostrophe.

This is correct. The Simpsons is plural, not possessive. The Simpsons are funny. For a possessive, it would be: It is the Simpsons' car.
