Anything but writing?

Which sentence would you consider to be correct and why?


"I don't do anything but writing"

"I don't do anything but to write"

"I don't do anythng but write"


I have a preference for the first sentence, but I'm not quite sure if you could use the gerund here, since you can't "do writing" or can you?
