Animal related expressions

We tend to use expressions like blind bat, stupid ass, greedy pig without wondering : are pigs really greedy? why do we say blind bats when in reality they can see?
Im doing an article on the origins of such animal related expressions and I would like to know where such expressions originated? how and why did they originate? and why are they so widely used?
