"I grew up without much of the benefit of a loving family and a good education."

Should I use 'and' or 'or' in sentences like these? Does it make any difference at all?

To the extent that "without" is a negative, I'd use "or."

But I don't believe "and" is incorrect in your example.

Think of it this way.

He does not have A, B and C. He does not have all 3. He may have none of these, or he may just have one of them, or he may just have 2 of them.

He does not have A, or B, or C. He does not have any
