How can I distinguish a countable noun and an uncountable noun? This is always so hard.

In the first case, the opinion is a hypothetical or undefined one - one which may or may not be given or which hasn't yet been given by an individual. We are talking about an opinion given by a person in the abstract. Every individual person either has or doesn't have "an opinion" about something.
