Am..pm in adjective form

Is this okay punctuationwise?

He worked the 11-am-to-7-pm shift.

Or is "11 am–7 pm shift" better?

I think the following reworks are much better. Do they all look good? I put quote marks around the names that serve as adjectives, and I italicized the legal case.
