amplification and restatement uses of comma

Hi,

Can we use a comma for amplication and restatement purposes? I think we sure can. At the same time, it is also true that we can use a dash instead. As to the use of a comma for the purposes stated, can the structural form of the content that is placed within a pair of comma take just about any from as long as it serves the purpose? Are these all OK? According to the community-2.webtv.net website on its solis-boo's Grammar section, I got these examples:

Restatement:

Consider how much rain forest the world loses each year--about two percent.

Amplification:

Her lawn-a verdant pasture-is a delight to behold.

I don't understand how they can serve the purposes, can you help me to understand?

Are these, although they are not sentences that pertain to the points explored, correct?

Two dogs, both male, began to bark.

Two dogs, yellow adn blue in color, began to bark.

Two dogs, with a loose collar, began to bark.

Two dogs, healthy as they could be, began to bark.

Why is it wrong to attach what seems to be a prepostional phrase used as part of an extra information phrase?

Two dogs, yellow and blue in color, began to bark. I know that yellow and blue are colours without you having to tell me. It's not wrong, it just seems a bit literary.
