&, ampersand

I'm editing a document that has "&" used throughout. I understand that it means "and," but have not seen it used to combine sentences or clauses. I've only seen it to combine proper nouns like in a company name. I've searched the web, but most sites don't cover its usage.

Please advise if these are appropriate uses: (Is it advisable)

Open both compartment doors & remove both life vests.
Rotate the actuator to you feel an increase in rotational torque & stop.
Release the bolt & pin.

It is seen as rather lazy to use & in general text, you should stick to 'and'. It is absolutely incorrect for formal/business writing. You are correct that & is usually found in company names, titles etc.
