Amount or number ?

Which would you say? How would you phrase this all please?

I have the exact number/amount of everything I need. 10 forks, 10 glasses, 10 plates. I took one too many spoons though./I took a spoon too many.

Well this raises the question of "everything" vs "every thing", and the two-word form may be more approppriate here. I really didn't pay attention to it in my first response.

In any case, forks, glasses and plates are certainly countable.
google "everything vs every thing".
