Marking and marks are terms used in British and Canadian English.
Grading and grades are used in American English.

So your sentence would be:
She spent the evening grading exam papers.

Furthermore, "exam papers" is a bit redundant for American and Canadian English. Just exams or papers would be fine. But I don't know if they usually say "exam papers" in British English

Exams are generally thought of as having more importance than "tests." Your mid-year and end-of-year tests are called exams.
