Alternative to Italicization

Is it out of the question to pluralize letters, numerals and words (as words) as I've done below? This, of course, is an alternative to italicization. Could the examples below work exactly as punctuated – yes or no?

Nancy's capital 'B's look like '8's.

Jeremiah used one too many 's's when he spelled 'Mississippi'.

There were too many 'I do's, 'maybe's, 'thank-you's, 'whereas's and 'like's in that last paragraph.
