all sorts of problems?

SHOT! Liverpool are struggling with Southampton aerial presence at the moment. Another ball into the box causes all sorts of problems and eventually falls to Lallana on the dge of the box, but his strike goes over the bar.
Why are "all" used in this sentence. It should be "several problems" ?

Not necessarily. After the match, you could say that Southampton caused several problems for Liverpool's defence. In that case you would be referring to this problem, that problem, that other problem, etc.
