What is the difference between these two sentences and which is the correct one?

The sunset covered all of the meadows with a warm sheen.

The sunset covered all the meadows with a warm sheen.

That's a collection of rather pretty phrases. Where did you get them? Some sound old, and I hesitate to mess with them. Things were different in past centuries. Some sound like lines from poems, and you can do things to make the meter work that you can't do in prose.

I realize in poetry you can get away with leaving the "of" in, but I was just worried if it was entirely wron

This one seems like it would almost be wrong without the "of".

In which case the rule:

is OK to use? Meaning they blurred the "entire" sky.
