All/ most + of + noun?

Hi everyone.
I just came across these sentences and they confused me a bit. Are these "of" needed here?

Thank you.

- Not all (of) people are friendly, but most (of) people have kind hearts.

- All (of) birds have wings, but not all (of) birds can fly.
