After 'Dear Sir', do you capitalise (Guest:K.Roche)

After writing 'Dear Sir,' does the first line of your letter have to start with a capital letter:

e.g 'Following our letter of...'

or is it a continuation,

e.g. 'following our letter....'

Which of the following versions is correct?

Version A:

'You should -

1. Brush your teeth everyday; and

2. Sleep early every night.'

Version B:

'You should -

1. brush your teeth everyday; and

2. sleep early every night.'

Version b is correct as they are continuations of the heading. I would not use a semi-colon though, just a comma after every day (which should be two words not one).

Thank you. I agree with you, but my lawyer friend said that she had done some research on the issue and that version B was correct. Version B does look funny. Is there a book on such matters? (P.S. Thanks for pointing out the spelling error.)
