Hi,

How to use adopt here?

I am a Japanese adopted by American parents.

Or is there some other way of writing it?

People do put it that way often enough, but such nouns in "-ese" are best reserved for referring to peoples—the Japanese, the Potuguese, etc. You can make it an adjective by adding a word like "girl" (I am a Japanese girl adopted …) or with "I was born Japanese and was adopted …."
