Adjectives

Hi I'd like to know why to some adjectives you add an -ed and to others you don't, e.g.:

live animal, live stock

and

blue eyed girl or specied soup

The ed suffix is added to nouns: a blue-eyed girl, a long-legged girl, a dark-haired girl.
But: spicy soup.
