Adjective use?

What are the rules for using adjectives? I bought some ‘skinless chicken breasts’ today. Since I have never seen skinless chickens running around I figured they were skinless breasts from a chicken instead of breasts from a skinless chicken.

'skinless chicken *******' have no more to do with skinless chickens than 'superficial war injuries' have to do with superficial wars or 'risky joint ventures' have to do with risky joints.
