Adjective + S Plural

Hi,Please consider these sentences:A.what color do you prefer to wear?B.I like purples and black to wear.Why is adj taking "s plural"? Is it used instead of nouns? I mean as a substitute.Purple dresses.Another problem: which one is correct?1.we are out of medium size.2.The medium size is out of stock.3.The computer is on/ in logged off mode4.The computer is logged off.RegardsR.N
