Adjective as subject

Hi teachers!

I wonder if an adjective can be a subject in a sentence as in the sentence below, which is from a book I study.


"Lower than 55 degree Ferenheit can be harmful rather than helpful to sleep, unless warm bedding or nightclothes are used"
