1.Europeans have long known that eating quail sometimes makes the eater ill.

2.Europeans have long known that quail eating sometimes makes the eater ill.

Guys... Will there be any difference in the meaning of sentence interchanging the role of adjective and noun as in sentence 2?

pokh any difference in the meaning Not really, but the first seems better to my ear. To my ear the second has a rather awkward compound structure that sounds made-up. The practice of "quail eating" seems odd to me, though "quail hunting" does not.

In my opinion the first sentce is the correct one providing you mean that if you eat quail you may feel ill.

"quail eating" suggests rather a practice or activity, such as quail hunting, as suggested in the previous post.
