I think I'm right in saying that is because the sentence structure is noun-verb-adjective. You cannot reverse the subject and object because there is no object. The verb is intransitive

Unless (and this is slightly silly) we are describing a man sipping a drink made with spirit and lemon; in which case you could have ...

- The sour is being tasted by Mr Lemon
