I believe you are correct. It's related to the word pincer, and I think that's what we call the end of a crab's claws.

so which is better? nip or pinch? or should 'pinch' be totally out of the picture?

Either are fine. I would say that it nips you but I think it really depends on the region you come from. Nobody would think less of you for using either.
