Abstract of reality

"To simplify, a ‘model’ is a representation or ‘abstraction’ of reality. For instance, the sculpture below[1](actually made from wood) mimics the human form."

What does "abstraction of reality" mean here?

In art, there is realism, where you try to make something that looks exactly like your subject, like the Dutch Masters still lifes. At the opposite end is abstract art, which makes no such attempt but sees the subject in a new way, like the Cubists. I would have to see the model to answer better.
