There in the corner he stood, phone in one hand, drink in the other.

Would you call the bolded phrase an absolute phrase?

Would you prefer '...with his phone in one hand...'?

Would you call the bolded phrase an absolute phrase? Yes. Two, actually.

Would you prefer '...with his phone in one hand...'? No, I find the original more stylish.

I agree with Clive that the original is more stylish, but if you wanted to use the '...with his...' version, it would sound more natural to say

"...with his phone in one hand and a drink in the other."
