About "what"

Hello everyone

What do you think about the following sentence?

'Cookbook sales and television cooking shows demonstrate [that / what] cooking is popular.'

I can definetely tell "that" is correct answer but I also think "what cooking is popular" is correct sentence as well.

What is your opinion??

I also think "what cooking is popular" is correct Yes, in the sense of "what kinds of cooking are popular". However, the mind of the native speaker tends so much toward the interpretation with "that" that it is highly unlikely that any of us would think of the less direct interpretation with "what" at all.
