Can I say,

The elephant is the largest.

The elephant is the largest is theoretically possible, as in:

You can see two animals in the picture. The elephant is the largest (of the two).

The superlative, however, is better substituted by the comparative (the larger) in careful usage.

If you intend to make a generalisation, without any context, you should say:

" To see two animals in the picture" is a hypothesis, and ( of the two) is paranthesis, which Vincent, possibly did not mean to refer to. Any way, the use of superlative in comparison between the two is hardly permissible in English grammar.
