about omission of relative pronouns

The book (which) I was reading was interesting.

I know object relative pronouns can be omitted .I am wondering why .

Because the subordinating conjunction comes right after the subject. In your example, "which" refers to subject, so nothing bad happens if it is omitted- we still have the subject(The book.)
