Could you please let me know what 'I wouldn't know', 'going about things' and 'caught with' mean respectively?

woudn't Know = implied conditional (e.g. I wouldn't Know if somebody asked me; this is more tentative than a simple 'I don't know')

would say = see the above explanation

What mind you? I don't see it.

mind you = used for making something that you have already said less strong

He is ruthless so you'd expect that not many people support him and yet the very next statement contradicts that.
