I have checked my books (as we non-experts are required to do before posting).

My books tell me that we should treat "variety" the same way we treat "number."

what about this sentence: A variety/range of products exists. According to your rule there should be "exist" instead of "exists."
2. A variety of dishes is/are being prepared. In this case it can take both plural and singular but don't know why? Cnyou explain this?
