A thousand I love yous or A thought I love you's?

I'm getting a poster drawn up with the following sentence:

'A thousand I love yous'


Is that the correct grammar?

It is very hard to know how to write this. Personally I am uneasy about "A thousand I love you's". Apostrophe s for plural is nomally a horrible error, and only in the most exceptional cases (e.g. plurals of lower-case letters) is it tolerable, in my opinion. On the other hand, perhaps you could argue that this is a most exceptional case.
