Yes, you can say "The young of a sheep is a lamb" but the revision suggested is better.

You cannot say "A young" and in this case "a" sheep is better than "the" sheep.

EDITED by khoff-- because I'm pretty sure the young of a sheep is a lamb, not a lamp!
