A specific question regarding a specific type of checks

Although in this era we've pretty much all moved onto credit cards, I still surprising find that there are some organizations that require their job/exam applicants to send in the application fee in the form of check.

My question is, what exactly are these checks that are addressed to a specific person/group??

Definitely not GIFT checks in my opinion.

Also, is the word "check" actually supposed to be spelled as "cheques" when used in the most formal situation??

No I meant those checks that are completely constrained to be used only be the addressees, namely, no one else can cash them other than the addressees.
