A smell of overcooking

If any items like rice, or curries or salads is forgotten to take out of the flames or to turn off the gas stove in proper time, it will emit some kind of smells that will show it is overcooked.

Can you please tell me how to describe the smell? And the act of overcooking.

Burning is the commonly said to be the overcooking. In fact it is the sugars (from the Carbonhydrates) caramilsing then finally carbonising. However if you stick to burn/ burnt/burning you'll be fine.
