A simple question on using singular or plural

What should I do? Chalk it up to a life lesson about good manners, or send out thank-you notes five years late with my apologies?

the sentence above is from "Dear abby".

as you can see, the writer used plural forms. notes, apologies
I guess the writer used plural forms because he/she has more than one person to send a letter to. If he/she had only one person to write back, he/she would have used "a note".
I also guess ,on the same basis, the rule goes for “apologies".
am I thinking correctly?
your advice would be appreciated.
