I like rice - stuffed grape leaves. ( It is/ They are) my favourite dish. I like (it/ them) very much.

My answer:

Am I right?

Yes, but I'd say that either 'it' or 'them' is OK for the second part.

You could be referring back to the grape leaves (them) or to the dish (it).
