Yes. It's correct. It's means the same as

The day was such that I could hardly walk.

It could mean that the speaker's arthritis was quite severe that day, so it was very difficult for him or her to walk.
It could mean that there was too much rain or snow or too much heat or cold that day, so it was very difficult for him or her to walk.

— that sort of thing.

As for a grammar reference, I don't know if it's important enough to have a whole chapter in a book, but you might look up "inversion".

As you saw above, "Such was the day" is an inversion of "The day was such". Inversion is a feature of language that is more literary or poetic than ordinary and conversational.
