A puzzling question

1.This is the best book (that / which)I have ever read.

2. This is all (that/ which) I want.

My answer

1. that 2. that

I studied that we use 'that' and not 'which' after the superlative degree and after the word 'all' .

Is this true? Can't we use 'which' in these two cases at all?
