1-He can guess everything (that/ which) you are thinking

2-None (that/ who) participated in the contest won the prize.

My answer : 1- that 2- that

1. that is much more usual than which. I don't recommend which here.
2. who is more appropriate because it refers to people.

Both answers are correct in both sentences.
