A olive salsa or an olive salsa?

Hi. I know that I should use 'an' before a word starting with a vowel, but in this case I am dealing with 'a salsa' made from olives. So is it a olive salsa or an olive salsa?

It's of course "an" olive salsa.... Thought it refer to the salsa, you use the word oil which plays the role of an adjective in here....

Could we write "...which plays a role of an adjective in here...." instead of the definite article

No, because the specific role which is played is actually mentioned in the sentence. It's not as if adjectives play a lot of different roles and we are only interested in one of them here. 'oil' plays the role of an adjective. ~ 'oil' is a modifier.
